Prep time: 20 minutes

Cook time: 2 1/2 hours


1 pound stew beef (trimmed and cubed)

21/2 cups beef stock

5 carrots - chunked

3 stalks celery - chunked

1 medium onion - chunked

2 cloves garlic - minced

3 Tbsp. olive oil

½ cup flour

½ tsp. Salt & ¼ tsp. pepper

gravy master

beef base (optional)

½ oz dark chocolate (optional – makes a rich stew)

Optional - 2 potatoes or 1 bag egg noodles or dumplings (Bisquick mix is adequate)

Prep: Dust beef cubes in flour and prep vegetables


Heat oil in dutch oven or pot

Brown beef

Lightly brown garlic

Add vegetables, beef stock, salt and pepper

Bring to boil

Reduce heat to simmer for 90 minutes

Add chocolate

Add gravy master and/or beef base to taste

Thicken with a roux or corn starch, if necessary

Finish simmer for 30 minutes

If preparing dumplings, start after 10 minute simmer

Prepare noodles or dumplings
